Ingredients

  • 1 pound bacon
  • 4 large eggs
  • 1 bunch green onions
  • 8 garlic cloves finely chopped
  • 1 handful fresh flat leaf parsley chopped
  • 1 pound pasta linguine preferred, De Cecco

Directions

    Boil pot of water with salt to cook pasta. Meanwhile chop bacon and cook in large frying pan.

    Once bacon is lightly crisped, add garlic, onions, and turn to slightly lower heat. Beat 4 eggs into separate mixing bowl.

    Once pasta is finished cooking, add it to pan with bacon/onions/garlic and toss at low heat. Immediately begin pouring eggs over while tossing, so that pasta cooks the eggs without scrambling them.

    Add parsley and continue to toss over low heat for about 5 minutes, then serve.
