  • 1 broiler-fryer chicken (about 3 lb.), cut into 8 pieces Safeway 1 lb For $1.99 thru 02/09
  • 2 Tbsp. adobo seasoning
  • 1/2 cup KRAFT Zesty Italian Dressing, divided
  • 6 cloves garlic, minced
  • 1 medium onion, sliced
  • 1/2 cup HEINZ Distilled White Vinegar or lime juice
  • 1/2 cup chopped pimento-stuffed green olives
  • 1/4 cup capers
  • 1 bay leaf
  • 4 cups hot cooked rice

Directions

    Rub chicken with adobo seasoning; set aside.

    Heat 1/4 cup of the dressing in large skillet on medium-high heat.

    Add chicken; cook 7 to 10 min.

    or until lightly browned, turning occasionally.

    Remove chicken from skillet; cover to keep warm.

    Drain and wipe out skillet with paper towels.

    Add remaining 1/4 cup dressing and all remaining ingredients except chicken and rice to skillet; cook and stir 3 min.

    Reduce heat to medium-low.

    Return chicken to skillet; simmer, covered, 45 min.
