Ingredients
- 8 ears or 4 c. frozen corn
- 1 1/2 c. red pepper, chopped
- 1 c. onion, chopped
- 1 c. jicama, chopped
- 3/4 c. sugar
- 3/4 c. vinegar
- 1 tsp. finely shredded lime peel
- 1/3 c. lime juice
- 1 tsp. celery seed
- 3/4 tsp. ginger
- 1/2 tsp. crushed red pepper
- 2 Tbsp. cornstarch
- 1 tsp. salt
Directions

1Combine corn and 1 cup water. Bring to a boil. Simmer 12 minutes (covered). Add everything but cornstarch.

2Simmer, uncovered, 5 minutes. Stir in cornstarch and 1/4 cup cold water. Cook and stir until thick and bubbly.

3Cook 2 minutes.

4Put in hot jars.

5Seal.

6Process 15 minutes in hot water bath.

7Makes about 6 1/2 pints.
