- 4 oz tilapia
- 1/3 cup rice
- 1/4 cup celery
- 1/8 cup portabella mushroom
- 1/8 cup red pepper
- 1/8 cup onion
- 1 1/2 tbsp lemon juice
- 1 tbsp orange concentrate
- 1 tbsp Carribean-Jerk sauce
- 1/4 tsp ground black pepper
- 1/8 tsp garlic salt
- 1/8 tsp onion salt
- 1/8 tsp cayenne pepper
Directions

1Bring pot of water to a roiling boil, add rice, and cook for 35-40 minutes until desired texture is reached.

2Wash veggies.

3Dice and set aside.

4In small mixing bowl, combine orange concentrate, Carribean-Jerk sauce, and lemon juice.

5Whisk together.

6Season fish with garlic salt, onion salt, black pepper, and cayenne pepper.

7Add to frying pan over low heat and cover.

8Cook until fish reaches 155F.

9When fish and rice finish cooking, remove fish from heat and plate.

10Wipe out frying pan, and return to heat.

11Drain water from rice, mix in sauce and veggies.

12Add to frying pan, cover, and cook for 4-5 minutes.

13Remove from heat and plate next to fish
