- 3 tablespoons olive oil
- 1 medium onion
- 13 cup flaked coconut or 13 cup shredded coconut
- 2 cups chicken stock
- 2 cups Minute Rice
- 6 scallions, chopped
- 0.75 (15 ounce) canmixed tropical fruit salad
Directions

1chop onion, scallions, and canned fruit.

2saute onion in olive oil in a sauce pan until translucent.

3add coconut and saute until slightly golden.

4pour in chicken stock and bring to a boil.

5add rice and cook for 1-2 minutes.

6add fruit and fold into the rice.

7turn off heat, cover, and allow to set for 5 minutes.

8top with chopped scallions.
