  • 3 tablespoons olive oil
  • 1 medium onion
  • 13 cup flaked coconut or 13 cup shredded coconut
  • 2 cups chicken stock
  • 2 cups Minute Rice
  • 6 scallions, chopped
  • 0.75 (15 ounce) canmixed tropical fruit salad

Directions

    chop onion, scallions, and canned fruit.

    saute onion in olive oil in a sauce pan until translucent.
  3. 3
    add coconut and saute until slightly golden.
  4. 4
    pour in chicken stock and bring to a boil.

    add rice and cook for 1-2 minutes.

    add fruit and fold into the rice.

    turn off heat, cover, and allow to set for 5 minutes.

    top with chopped scallions.
