  • oil
  • 3 medium onions
  • 5 carrots
  • pepper
  • 4 cloves garlic
  • flour
  • fat

    Chop onions and carrots.

    Marinate meat 3 hours in a mixture of oil, vegetables and pepper.

    Turn meat every 30 minutes.

    Dry meat and insert slivered garlic into meat.

    Flour and place in roasting pan with fat.

    Roast at 500° for 30 to 40 minutes (rare) or 45 minutes (medium).
