  • 1 pound rotisserie pork
  • 15 ounces black beans drained, rinsed
  • 3 cups cherry tomatoes halved
  • 1/2 cup cilantro chopped
  • 2 avocado peeled and diced
  • 1 teaspoon kosher salt
  • black pepper cracked, as needed
  • 4 tablespoons lime vinaigrette
  • 2 cups quinoa rinsed
  • hot sauce to taste

    For the Pork: Dice rotisserie pork.

    Bring four cups of water to a boil in a large stock pot. Cook quinoa according to package instructions

    In a mixing bowl, combine pork, beans, tomatoes, cilantro, avocado, salt, pepper and lime vinaigrette. Toss to combine and coat all ingredients.
