Carolina Creamed Corn

  • 1 bag (24 Oz. Bag) Frozen Corn
  • 2 Tablespoons Butter
  • 1 cup Water
  • 3/4 cups Skim Milk
  • 1-1/2 Tablespoon Flour
  • 3 ounces, weight Neufchatel Cream Cheese
  • 1 teaspoon Salt
  • 1/2 teaspoons Pepper

    In a skillet over medium heat, combine the corn, butter and water. (Use more water if necessary...you'll need enough to cover the corn) and bring to a boil. Season with salt. Bring the heat to low and continue for 10 minutes. Whisk together the milk and flour and slowly add to the corn. Simmer for 2-3 minutes, until the mixture thickens. Add the cream cheese and stir. Thin out with milk if the corn becomes too thick. Season with white or black pepper.
