- 3 eggs
- 1/2 c. salad oil
- 1 tsp. vanilla
- 2 c. finely shredded carrots
- 2 c. packaged grated coconut
- 1 c. raisins
- 1 c. chopped walnuts
- 2 c. unsifted flour
- 1/2 tsp. salt
- 1 tsp. soda
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1 c. sugar
Directions

1In a large bowl, beat eggs until light. Stir in vanilla and salad oil.

2Add carrots, coconut, raisins and nuts.

3Mix well until blended.

4Combine the flour, salt, soda, baking powder, cinnamon and sugar. Sift into the first mixture.

5Stir just until well blended. Spoon into a 9 x 5-inch loaf pan that has been well buttered and dusted with flour. Bake at 350° for about 1 hour or until it tests done.

6Remove from pan and cool completely.

7Its flavor and texture improve if wrapped and refrigerated for several days.

8Yields 1 loaf.
