- 1 1/2 c sifted flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 c oil
- 1/2 c sugar
- 1/2 c brown sugar
- 3 eggs
- 1 c grated carrots
- 1/2 c chopped pecans
Directions

1Sift dry ingredients together.

2In a mixing bowl combine oil, sugars, eggs.

3Then beat until well blended.

4Add dry ingredients and blend well.

5Stir in carrots and nuts.

6Spoon batter into a greased 9 x 5 x 3 inch loaf pan.

7Bake in 350 oven for 1 hour or until done.

8Cool, slice and spread with cream cheese.
