- 2 c. Bisquick reduced fat baking mix
- 1 1/2 c. shredded carrots
- 3/4 c. sugar
- 1/4 c. vegetable oil
- 2 tsp. ground cinnamon
- 1 tsp. vanilla
- 1/2 tsp. ground nutmeg
- 2 eggs
Directions

1Heat oven to 375°.

2Grease bottom only of loaf pan, 8 1/2 x 4 1/2 x 2 1/2-inch.

3Mix all ingredients.

4Pour into pan.

5Bake 50 to 55 minutes or until toothpick inserted in center comes out clean and top crust is deep golden brown.

6Cool 15 minutes. Loosen sides of loaf from pan; remove from pan.

7Cool completely before slicing.

8Store in refrigerator.

9Makes 1 loaf (16 slices).
