- 2 pkg. yeast, dissolved in 3/4 c. water and 1 tsp. sugar
- 1 c. tomato juice
- 2 eggs, beaten
- 1 Tbsp. salt
- 2 Tbsp. onion, grated
- 3 Tbsp. oil
- 2 c. flour
- 1 1/2 c. grated carrots (raw)
- 1 c. fresh parsley
- 1 Tbsp. basil
- 4 to 5 c. flour
Directions

1Mix together like a sponge first 8 ingredients; let rise 20 minutes.

2Add to sponge the carrots (raw), parsley, basil and flour.

3Knead; let rise until double in bulk.

4Form into 2 loaves. Let rise again.

5Bake at 375° for 35 minutes.
