Ingredients

  • 2 pkg. yeast, dissolved in 3/4 c. water and 1 tsp. sugar
  • 1 c. tomato juice
  • 2 eggs, beaten
  • 1 Tbsp. salt
  • 2 Tbsp. onion, grated
  • 3 Tbsp. oil
  • 2 c. flour
  • 1 1/2 c. grated carrots (raw)
  • 1 c. fresh parsley
  • 1 Tbsp. basil
  • 4 to 5 c. flour

Directions

    Mix together like a sponge first 8 ingredients; let rise 20 minutes.

    Add to sponge the carrots (raw), parsley, basil and flour.

    Knead; let rise until double in bulk.

    Form into 2 loaves. Let rise again.

    Bake at 375° for 35 minutes.
