- 4 eggs
- 2 c. sugar
- 1 c. vegetable oil
- 1 tsp. vanilla
- 1 Tbsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 3 c. flour
- 2 c. finely shredded raw carrots
- 1/2 c. raisins
- 1/2 c. chopped pecans
Directions

1Grease 2 - 9 x 5 x 3 loaf pans.

2Into a large mixing bowl measure eggs, sugar, vegetable oil, vanilla, cinnamon, baking powder, baking soda, salt.

3Beat 1/2 minute on low speed scraping constantly.

4Beat 1 minute on medium speed scraping constantly until smooth.

5Stir in flour gradually, then mix in remaining ingredients.

6Divide batter between 2 pans.

7Bake at 350° for 50 minutes.

8Cool in pans 5-10 minutes then remove and cool thoroughly.

9Freeze well.
