- 1 c. sugar
- 3/4 c. oil
- 1 1/2 c. flour
- 2 eggs
- 1 1/2 c. grated raw carrots
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 c. chopped nuts
- 1 tsp. vanilla
Directions

1Mix all ingredients except carrots and nuts with electric beater.

2Fold in carrots and nuts by hand.

3Grease 5 x 9-inch loaf pan and bake at 350° for 1 hour and 15 minutes.

4Two 1 pound loaf pans may be used; bake for 30 to 35 minutes.

5Cool for 15 minutes before turning out onto wire rack.
