  • 1 c. sugar
  • 3/4 c. oil
  • 1 1/2 c. flour
  • 2 eggs
  • 1 1/2 c. grated raw carrots
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 c. chopped nuts
  • 1 tsp. vanilla

Directions

    Mix all ingredients except carrots and nuts with electric beater.

    Fold in carrots and nuts by hand.

    Grease 5 x 9-inch loaf pan and bake at 350° for 1 hour and 15 minutes.

    Two 1 pound loaf pans may be used; bake for 30 to 35 minutes.

    Cool for 15 minutes before turning out onto wire rack.
