- 3 eggs, well beaten
- 3 c. sugar
- 1 c. oil
- 1 tsp. salt
- 2 c. finely grated carrots
- 1 c. chopped walnuts
- 1 c. whole wheat flour
- 2 c. unbleached flour
- 1 tsp. soda
- 1 tsp. cinnamon
- 1 can crushed pineapple, well drained
- 2 tsp. vanilla
Directions

1Combine eggs, sugar, vanilla and oil.

2Stir well.

3Add sifted dry ingredients.

4Stir well.

5Add carrots, nuts and pineapple. Stir well.

6Spoon into greased loaf pans.

7Bake at 375° for 1 hour.

8Serve cold, with or without butter.
