- 4 eggs
- 2 c. sugar
- 1 1/4 c. salad oil
- 3 c. unsifted flour
- 2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 2 c. finely shredded raw carrots
Directions

1Beat eggs.

2Add sugar gradually.

3Beat until thick.

4Add oil gradually and combine thoroughly.

5Stir in dry ingredients until mixture is smooth.

6Stir in carrots and blend well.

7Turn into 2 well-greased loaf pans or 3 (1-pound) coffee cans, filling 2/3 full.

8Bake in a 350° oven for 1 hour or until tester comes out clean.

9Good hot, cold or toasted.

10Can be doubled or frozen.
