  • 2 c. flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 2 c. sugar
  • 4 eggs
  • 1 1/2 c. Wesson oil
  • 2 c. grated carrots
  • 1 small can crushed pineapple
  • 1/2 c. chopped pecans

    Beat eggs until well blended.

    Add oil and sugar.

    Beat after each addition. Add all dry ingredients to oil mixture. Add carrots, pineapple and nuts. Bake at 350° for 35 to 40 minutes. Makes 4 (7-inch) layers (enough for 2 cakes).
