- 1 1/2 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. salt
- 2 tsp. cinnamon
- 2 c. sugar
- 1 1/2 c. oil
- 4 eggs
- 2 c. carrots, finely grated
- 1 small can crushed pineapple (optional)
- 1/2 c. chopped nuts (optional)
Directions

1Sift flour, soda, powder, salt and cinnamon.

2Add sugar, oil and eggs; mix.

3Add carrots, nuts and pineapple.

4Turn into greased and floured long pan or spring-form pan.

5Bake at 350° for 55 to 60 minutes.
