  • 2 c. sugar
  • 1 1/2 c. oil
  • 4 eggs
  • 3 c. raw carrots, grated fine
  • 1 tsp. salt
  • 2 tsp. soda
  • 2 c. flour
  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1 tsp. ground cloves
  • 1/2 to 1 c. chopped nuts (walnuts or pecans)

Directions

    Beat sugar and oil; add eggs and beat well.

    Sift flour, salt, soda, nutmeg, cinnamon and ground cloves together.

    Add to egg mixture and mix well.

    Fold in carrots and nutmeats.

    Pour into a 9 x 13-inch pan.

    Bake for 1 hour and 10 minutes.
