- 2 c. sugar
- 1/2 c. Mazola oil
- 4 eggs
- 2 c. flour
- 2 Tbsp. baking powder
- 2 Tbsp. cinnamon
- 1 tsp. salt
- 1 tsp. vanilla
- 2 (8.5 oz.) cans fresh-like carrots, drained (reserve 1/4 c. liquid)
- 2 c. chopped walnuts
Directions

1Grease and flour 3 (8-inch) round cake pans.

2Cream sugar, oil and eggs.

3Sift flour, baking powder, cinnamon and salt.

4Add flour mixture to creamed mixture.

5Add carrots, liquid and vanilla; beat 2 minutes.

6Bake at 350° for 20 minutes or until wooden pick comes out clean.

7Let cool on cooling rack.
