  • 2 c. sugar
  • 1/2 c. Mazola oil
  • 4 eggs
  • 2 c. flour
  • 2 Tbsp. baking powder
  • 2 Tbsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 2 (8.5 oz.) cans fresh-like carrots, drained (reserve 1/4 c. liquid)
  • 2 c. chopped walnuts

    Grease and flour 3 (8-inch) round cake pans.

    Cream sugar, oil and eggs.

    Sift flour, baking powder, cinnamon and salt.

    Add flour mixture to creamed mixture.

    Add carrots, liquid and vanilla; beat 2 minutes.

    Bake at 350° for 20 minutes or until wooden pick comes out clean.

    Let cool on cooling rack.
