  • 3 eggs
  • 2 c. sugar
  • 1 c. oil
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 2 c. flour
  • 2 1/2 large jars baby carrots
  • 3/4 c. walnuts
  • 1 c. crushed pineapple, drained
  • 1 c. coconut

Directions

    Mix all ingredients with mixer.

    Bake at 350° for 55 minutes in a 9 x 13-inch greased and floured pan.

    (I use a cream cheese frosting.)
