  • 2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 c. oil
  • 3 c. grated carrots
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 c. granulated sugar
  • 4 eggs

Directions

    Sift flour, baking powder, baking soda, salt and cinnamon in large bowl.

    Add sugar and stir.

    Add oil and eggs; will be stiff. Add grated carrots slowly.

    Bake at 350° for 40 minutes or more in 13 x 9-inch or larger greased pan.
