  • 3 c. grated carrots
  • 4 eggs
  • 1 1/2 c. salad oil
  • 2 c. sugar
  • 2 c. self-rising flour (if regular flour is used, add 3 1/2 tsp. baking powder)
  • 1 c. chopped black walnuts
  • 1 tsp. vanilla
  • 1/4 tsp. walnut extract
  • 1 tsp. cinnamon

Directions

    Mix all ingredients until well blended and batter is smooth. Pour into a greased tube pan and bake at 350° for 1 1/2 hours. Remove from oven and glaze while cake is still hot.
