  • 2 Tbsp. granulated fructose or granulated sugar replacement
  • 4 eggs
  • 1/2 c. water
  • 2 c. flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. salt
  • 1/2 c. pecans, chopped
  • 3 c. carrots, grated
