  • 2 c. sifted flour
  • 1 1/2 c. vegetable oil
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 3 c. grated carrots
  • 5 eggs
  • 2 tsp. baking soda
  • 1 1/2 c. chopped nuts

Directions

    Combine everything but the nuts; beat 2 minutes.

    Add nuts. Bake at 350° for 50 minutes or until toothpick comes out clean.
