- 1/2 lb. eggs
- 3/4 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 lb. nuts, chopped
- 1 1/4 c. oil
- 1 3/4 c. all-purpose flour
- 2 1/2 tsp. baking soda
- 1 lb. 4 oz. carrots, grated
Directions

1Combine sugar, oil and eggs.

2Beat 2 minutes on medium. Combine dry ingredients.

3Add to oil mixture.

4Beat 1 minute.

5Add carrots and nuts.

6Mix well.

7Bake at 325° for 45 to 60 minutes.
