  • 2 c. flour
  • 2 c. sugar
  • 3 c. grated carrots
  • 2 tsp. soda
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 1/2 c. Wesson oil
  • 4 eggs
  • 1 c. chopped pecans
  • 1/8 tsp. salt

Directions

    Mix by hand sugar and oil.

    Add eggs one at a time.

    Whip carrots into this.

    Then add dry ingredients.

    Bake in an 8 x 13-inch pan at 350° for 25 to 30 minutes.

    In some ovens it may take one hour.
