- 3 eggs
- 2 c. sugar
- 1 1/2 c. Crisco oil
- 3 c. all-purpose flour
- 1 tsp. salt
- 2 tsp. soda
- 2 tsp. cinnamon
- 2 c. grated carrots
- 1 c. chopped nuts
- 1 c. drained crushed pineapple
- 2 tsp. vanilla
Directions

1Preheat oven to 350°.

2Beat eggs and sugar gradually until creamy.

3Add oil and beat.

4Add flour, soda and cinnamon.

5Stir in grated carrots, nuts, pineapple and vanilla.

6Pour in tube pan (ungreased).

7Bake for 1 hour and 15 minutes.

8Do not turn pan upside down until it cools or it will break apart.

9Good plain or with cream cheese icing.
