Ingredients

  • 2 c. flour
  • 1 1/2 tsp. baking soda
  • 2 tsp. baking powder
  • 1/3 tsp. salt
  • 2 tsp. cinnamon
  • 2 c. sugar
  • 1 c. oil
  • 4 eggs or 1 c. egg substitute
  • 2 c. grated or ground carrots
  • 1 (8 oz.) can crushed pineapple, drained
  • 1/2 c. chopped nuts
  • 3 1/2 oz. can shredded coconut

Directions

    Sift dry ingredients together in large bowl.

    Add sugar, oil, eggs and mix well.

    Add carrots, nuts, coconut and pineapple; blend well.

    Bake in 10-inch tube pan at 350° for 1 hour.
