- 2 c. flour
- 1 1/2 tsp. baking soda
- 2 tsp. baking powder
- 1/3 tsp. salt
- 2 tsp. cinnamon
- 2 c. sugar
- 1 c. oil
- 4 eggs or 1 c. egg substitute
- 2 c. grated or ground carrots
- 1 (8 oz.) can crushed pineapple, drained
- 1/2 c. chopped nuts
- 3 1/2 oz. can shredded coconut
Directions

1Sift dry ingredients together in large bowl.

2Add sugar, oil, eggs and mix well.

3Add carrots, nuts, coconut and pineapple; blend well.

4Bake in 10-inch tube pan at 350° for 1 hour.
