- 3/4 c. Wesson oil
- 1 c. sugar
- 1 1/2 c. flour
- 1 tsp. baking powder
- 1 c. grated carrots
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 2 eggs
- 1 tsp. baking soda
- 1/2 c. chopped pecans
Directions

1Stir, by hand, all ingredients, except the carrots and pecans. Once mixed, add carrots and pecans.

2Line bread pan with aluminum foil and pour mixture in pan.

3Bake approximately 1 hour at 350° until lightly browned.

4Makes 8 to 10 servings.
