  • 4 eggs
  • 2 c. sugar
  • 3 small jar carrots
  • 1 small jar pineapple
  • 1 c. chopped walnuts
  • 1 c. raisins
  • 1 c. shortening
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 2 c. flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon

Directions

    Sift together flour, baking soda, cinnamon.

    Add salt and vanilla.

    Combine eggs and sugar and add carrots, pineapple, nuts, raisins.

    Add moist and dry ingredients.

    Lightly grease 2 loaf pans.

    Bake at 370° for 50 minutes or until shrinks from sides of pan.
