- 1 1/2 c. salad oil
- 4 eggs, beaten
- 1/2 c. chopped nuts
- 3 tsp. baking powder
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 3 c. flour
Directions

1Mix carrots, sugar, oil and beaten eggs together.

2Gradually add remaining flour ingredients.

4Grease 2 loaf pans. Bake at 350° for 1 hour or until done.
