  • 2 c. grated carrots
  • 2 c. sugar
  • 1 1/2 c. salad oil
  • 4 eggs, beaten
  • 1/2 c. chopped nuts
  • 3 tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 3 c. flour

Directions

    Mix carrots, sugar, oil and beaten eggs together.

    Gradually add remaining flour ingredients.

    Mix well.

    Grease 2 loaf pans. Bake at 350° for 1 hour or until done.
