- 3 c. grated carrots
- 2 c. all-purpose flour
- 2 c. sugar
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 4 eggs, well beaten
- 1 1/2 c. vegetable oil
- 1 tsp. vanilla extract
- Cream Cheese Frosting (can be purchased in premade cans)
Directions

1Combine the first 7 ingredients; stir in eggs, oil and vanilla.

2Mix well.

3Spoon batter into 3 greased and floured 9-inch cake pans.

4Bake at 350° for 30 minutes or until cake tests done.

5Spread cream cheese frosting between layers and on top of cake while still warm.

6Yields one 3-layer cake.
