Ingredients

  • 2 c. flour
  • 2 c. sugar
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 1/4 c. vegetable oil
  • 4 eggs
  • 3 c. grated carrots
  • 1 c. chopped pecans
  • 2 tsp. vanilla
  • Cream Cheese Frosting

Directions

    Combine flour, sugar, baking powder, baking soda, cinnamon and salt in large bowl of mixer; mix until well blended.

    Add oil, then eggs, one at a time.

    Then add nuts, carrots and vanilla; mixing well.

    Grease a Bundt pan thoroughly.

    Pour in mixture and bake in preheated oven at 350° for 1 hour or until cake springs back when touched lightly.

    Cool in pan.

    Remove and frost with Cream Cheese Frosting.
