- 2 c. flour
- 2 c. sugar
- 2 tsp. baking powder
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 1/4 c. vegetable oil
- 4 eggs
- 3 c. grated carrots
- 1 c. chopped pecans
- 2 tsp. vanilla
- Cream Cheese Frosting
Directions

1Combine flour, sugar, baking powder, baking soda, cinnamon and salt in large bowl of mixer; mix until well blended.

2Add oil, then eggs, one at a time.

3Then add nuts, carrots and vanilla; mixing well.

4Grease a Bundt pan thoroughly.

5Pour in mixture and bake in preheated oven at 350° for 1 hour or until cake springs back when touched lightly.

6Cool in pan.

7Remove and frost with Cream Cheese Frosting.
