  • 1 1/2 c. vegetable oil
  • 4 eggs
  • 3 c. grated carrots (approximately 1 lb.)
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 2 c. sugar
  • 1 tsp. cinnamon
  • 2 c. flour
  • 2 tsp. baking soda
  • 1 c. chopped walnuts

Directions

    Blend together oil and sugar.

    Add eggs, one at a time.

    Sift all dry ingredients together and add to mixture. Add carrots and nuts.

    Bake at 300° for 30 to 40 minutes in a 13 1/2 x 9 1/2-inch cake pan, greased and floured.
