- 1 1/2 c. vegetable oil
- 4 eggs
- 3 c. grated carrots (approximately 1 lb.)
- 2 tsp. baking powder
- 1 tsp. salt
- 2 c. sugar
- 1 tsp. cinnamon
- 2 c. flour
- 2 tsp. baking soda
- 1 c. chopped walnuts
Directions

1Blend together oil and sugar.

2Add eggs, one at a time.

3Sift all dry ingredients together and add to mixture. Add carrots and nuts.

4Bake at 300° for 30 to 40 minutes in a 13 1/2 x 9 1/2-inch cake pan, greased and floured.
