  • 3/4 c. oil
  • 2 c. flour
  • 2 tsp. soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 c. grated carrots
  • 1 c. coconut
  • 1 c. chopped nuts
  • 1 small can crushed pineapple
  • 3/4 c. buttermilk
  • 2 tsp. vanilla

Directions

    Combine eggs, sugar and oil and beat.

    Add remaining ingredients and mix well.

    Put in 13 x 9 x 2-inch pan.
