  • 1 1/2 c. oil
  • 4 eggs
  • 2 c. flour
  • 2 1/2 tsp. cinnamon
  • 2 c. shredded carrots
  • 1 c. pecans
  • 1/2 or small can coconut
  • 1 small can crushed pineapple, well drained

Directions

    Mix all ingredients together until well blended.

    Will make 3 layers or 1 sheet cake.

    Bake a sheet cake for around one hour. Grease pans well.

    Bake layers at 350° for 30 to 35 minutes or until done.
