- 3 eggs
- 2 1/4 c. sugar
- 1 1/2 c. oil
- 2 c. finely grated carrots
- 1 c. crushed pineapple
- 1 c. flaked coconut
- 2 c. flour
- 2 tsp. soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 c. chopped nuts
- 1 tsp. vanilla
Directions

1Beat eggs, sugar and oil well.

2Add carrots, pineapple and coconut.

3Sift dry ingredients together and add with nuts and vanilla.

4Mix well.

5Bake in ungreased rectangular pan at 350° for 50 minutes.

6Turn oven off, but do not remove cake for 10 minutes. Good frosted or un-!
