  • 2 c. all-purpose flour
  • 3 c. sugar
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 4 eggs
  • 1 1/3 c. cooking oil
  • 4 c. grated carrots
  • 1 c. chopped pecans

Directions

    Mix in large bowl flour, sugar, salt and cinnamon.

    In a separate bowl mix eggs until frothy; slowly beat in oil. Gradually add flour mixture; beat until smooth.

    Mix in carrots and nuts.

    Pour into greased and floured 9 x 13 x 2-inch cake pan. Bake at 350° for 25 to 30 minutes or until done.

    Cool completely before frosting.
