- 2 c. all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1 tsp. vanilla
- 1 1/2 c. oil
- 2 c. sugar
- 4 eggs
- 2 c. finely grated carrots
Directions

1Sift together dry ingredients; set aside.

2Combine oil, sugar and vanilla; mix well.

3Add eggs one at a time, beating well. Gradually add dry ingredients mixing well.

4Add carrots and mix well.

5Pour into 3 (8-inch) round pans.

6Bake at 325° for 20 to 25 minutes or until done.
