  • 3 C.grated carrots
  • 1 1/2 C.salad oil
  • 2 C.sugar
  • 1/2 C.chopped pecans
  • 4 eggs
  • 2 C.plain flour
  • 2 tsp.soda
  • 2 tsp.baking powder
  • 1 tsp.salt
  • 2 tsp.cinnamon
  • ICING
  • 1 8-oz. pkg cream cheese
  • 1 stick butter, melted
  • 1 box sifted confectioners' sugar
  • 1 C.chopped pecans
  • 2 tsp.Vanilla

Directions

    Mix together carrots, salad oil, sugar and pecans. Add eggs, one at a time, beating well after each addition. Add gradually flour, soda, baking powder, salt and cinnamon, which have been sifted together. Bake in 3 well-greased and floured pans at 350 degrees for about 1 hour or until done.
