- 1 1/2 cups Granulated Sugar
- 1 teaspoon Baking Powder
- 1 teaspoon Salt
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon ground Cinnamon
- 1/2 teaspoon ground Ginger
- 1/2 teaspoon Nutmeg
- 1 cup shredded Carrots
- 3/4 cup Vegetable Oil
- 8.5 oz. can crushed Pineapple (drained)
- 3 Eggs
- 1 Tablespoon hot Water
- 1/2 cup chopped Walnuts or Pecans
- 1/4 cup Golden Raisins
Directions

1Mix flour, sugar, baking powder, salt, baking soda, cinnamon, ginger and nutmeg in a large bowl. Combine carrots, oil, pineapple, eggs, and water; stir into dry ingredients, mixing until smooth. Stir in nuts and raisins. Pour into prepared 9-inch cake pan. Bake at 350 for 45 minutes or until cake springs back when lightly touched. Remove from pan and completely cool before icing with cream chees icing.
