Carrot Cake

Ingredients

• 2 cups sugar
• 1 1/2 c. Wesson Oil
• 4 eggs (beat well)
• Mix above together.
• Then sift together:
• 1 1/2 teaspoons soda
• 2 teaspoons cinnamon
• 2 cups self-rising flour
• 3 cups grated raw carrots
• (After grating, put carrots into a cloth, squeeze out excess moisture. Be sure to still get 3 cups after squeezing.)
• Add above to mixture - makes 3 layers
• Icing
• 1 box confectioners sugar (10X)
• 1 stick butter
• 1 8 oz. pkg. cream cheese
• 1 teaspoon vanilla
• Mix well
• Add 1 cup chopped pecans
