Ingredients

  • -3 cups shredded carrots
  • -2 cups flour
  • -2 cups sugar
  • -1 cup oil
  • -3 eggs
  • -1 teaspoon vanilla
  • -1 teaspoon baking powder
  • -1 teaspoon baking soda
  • -1 teaspoon cinnamon
  • -1 teaspoon salt
  • -a dash of fresh ground ginger
  • For frosting:
  • 1 package cream cheese
  • 1 teaspoon milk
  • 1 teaspoon vanilla
  • 2 or 2 1/4 powdered sugar or up to your taste.
  • Blend Frost and Bon Appetite :-)

Directions

    Shred the carrots-put aside

    Blend the eggs sugar and vanilla in the blender ( same one you shredded the carrots in,,just rinse it ) until very light, around 5 minutes.

    Add the flour and spices to the shredded carrots then add the oil , and mix just till blended ( do not over mix).

    Put in two 9 inch pans ( that are buttered and floured)

    Bake around 25 minutes
