- -3 cups shredded carrots
- -2 cups flour
- -2 cups sugar
- -1 cup oil
- -3 eggs
- -1 teaspoon vanilla
- -1 teaspoon baking powder
- -1 teaspoon baking soda
- -1 teaspoon cinnamon
- -1 teaspoon salt
- -a dash of fresh ground ginger
- For frosting:
- 1 package cream cheese
- 1 teaspoon milk
- 1 teaspoon vanilla
- 2 or 2 1/4 powdered sugar or up to your taste.
- Blend Frost and Bon Appetite :-)
Directions

1Shred the carrots-put aside

2Blend the eggs sugar and vanilla in the blender ( same one you shredded the carrots in,,just rinse it ) until very light, around 5 minutes.

3Add the flour and spices to the shredded carrots then add the oil , and mix just till blended ( do not over mix).

4Put in two 9 inch pans ( that are buttered and floured)

5Bake around 25 minutes
