  • 2 c. sugar
  • 1 c. oil
  • 2 tsp. soda
  • 1/4 tsp. salt
  • 2 jars junior size baby carrots
  • 1 tsp. vanilla
  • 4 eggs
  • 2 tsp. cinnamon
  • 2 c. flour

Directions

    Beat until creamy the sugar and oil.

    Add soda, salt, carrots, vanilla and eggs.

    Then add cinnamon and flour.

    Place in a greased and floured loaf pan. Bake at 350° for 30 to 40 minutes.
