- 2 eggs
- 1/2 c. vegetable oil
- 1/2 c. honey
- 1/2 c. plain low-fat yogurt
- 1/4 c. brown sugar
- 2 c. whole-wheat flour
- 1 1/2 tsp. cinnamon
- 1 tsp. baking soda
- 1 1/2 c. carrots, grated
- 1/2 c. raisins
- 1/2 c. walnuts, chopped
Directions

1Preheat oven to 400°.

2In a large bowl beat the eggs well and add oil, honey, yogurt and sugar; mix well.

3Blend in flour, then add remaining ingredients and mix well. Spray an 8-inch square pan with nonstick cooking spray.

4Pour batter into pan and bake for 35 to 40 minutes or until done.

5For a nice touch sprinkle on some confectioners sugar after cake has cooled.
