  • 2 c. flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 4 large eggs
  • 2 c. sugar
  • 2 tsp. cinnamon
  • 1 1/2 c. oil
  • 3 c. grated carrots

Directions

    Beat eggs and sugar together one at a time; add oil and mix well.

    Add flour, soda, salt and spices sifted together and mix. Add carrots last.

    Bake in three layers at 350° for 25 to 30 minutes.

    Cool and ice cake.
