- 1 1/2 c. cooking oil
- 2 c. sugar
- 4 eggs
- 1/2 c. chopped carrots
- 1 small can crushed pineapple
- 2 c. flour
- 2 tsp. soda
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. sugar
- 1 1/2 c. nuts, chopped
Directions

1Preheat oven to 350°.

2Blend oil, sugar and eggs together. Add carrots and pineapple.

3Add dry ingredients and nuts.

4Pour into greased and floured 9 x 13 pan or Bundt pan.

5Bake for 40 to 45 minutes.

6Check for doneness by inserting toothpick.

7Frost with cream cheese and powdered sugar frosting.
