- 4 large eggs
- 2 c. sugar
- 1 c. vegetable oil
- 1 tsp. vanilla
- 2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1 1/2 tsp. baking soda
- 3 c. loosely packed grated carrots
- 1 c. chopped pecans
Directions

1In large bowl, beat eggs, sugar, oil and vanilla until combined.

2Add dry ingredients.

3Stir until smooth.

4Pour in nuts. Gently fold in carrots.

5Bake in a 350° oven for 30 to 35 minutes. Don't overbake.

6Cool in pans on racks 5 minutes.

7Remove from pans.

8Cool completely, then frost with Cream Cheese Frosting.
