  • 4 large eggs
  • 2 c. sugar
  • 1 c. vegetable oil
  • 1 tsp. vanilla
  • 2 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 1/2 tsp. baking soda
  • 3 c. loosely packed grated carrots
  • 1 c. chopped pecans

Directions

    In large bowl, beat eggs, sugar, oil and vanilla until combined.

    Add dry ingredients.

    Stir until smooth.

    Pour in nuts. Gently fold in carrots.

    Bake in a 350° oven for 30 to 35 minutes. Don't overbake.

    Cool in pans on racks 5 minutes.

    Remove from pans.

    Cool completely, then frost with Cream Cheese Frosting.
