- 1 1/4 c. oil
- 2 c. flour
- 2 tsp. baking soda
- 2 c. sugar
- 3 c. grated carrots
- 4 eggs
- 1 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. vanilla
- 1 c. nuts or raisins
Directions

1Combine oil and sugar in a large bowl.

2Sift together flour, salt, soda and cinnamon.

3Add to oil and sugar and mix well.

4Beat in eggs, vanilla and carrots.

5Fold in nuts or raisins.

6Bake at 350° in a 9 x 13 x 2-inch greased cake pan for 45 minutes, or until center springs back to the touch.

7This cake is very moist and keeps well.
